It's mostly geographical. India and China were built on huge rivers with a climate perfect for agriculture for most of the year. Rice, the staple crop of those regions, also provides many more calories than wheat, the staple crop of Western Countries, so the same amount of farmland also fed more people. China also had long periods of stability, encouraging population growth as people weren't preoccupied with fighting compared to the wars of Europe.
